My Souperinspiration: Broccoli Mac and Cheese
I read somewhere that if we ate only what was good for us, a healthy dose of broccoli would be on our menus every day. If you aren’t a broccoli-lover, you will probably imagine yourself turning green after a while, sprouting florets in the oddest places! However, here at The Soup Spoon, we assure you that our broccoli puree will be a crowd-pleaser and a favourite of those who wouldn’t think of eating any more vegetable than absolutely necessary! In this lush and creamy puree, the broccoli is blended with cheddar and cream cheese, thickened with potatoes and finished off with cream. Macaroni is added to make it a hearty meal, served with lemon slices. Absolutely souperb.
Ingredients: broccoli, potatoes, carrots, red bell pepper, green bell pepper, celery, cream cheese, cheddar cheese, macaroni, milk, cream, white wine, lemons and parsley.
Condiment: lemon slices
