We were on the road a lot in New Zealand and one of the perks was stopping by the many convenience stores and petrol stations to check out what they offer! I realised that pies are a staple for the Kiwis! Almost every store we stopped at offered an appetising array of pies, both sweet and savoury, big and small. One interesting pie that caught my eye was the butter masala chicken pie, perhaps a testament to the huge Indian migrant community in New Zealand, bringing with them their unique cuisine and culture.

At the beginning of this trip with Fonterra, I had set out to discover the New Zealand cuisine. What exactly is the New Zealand cuisine? Is there even one to begin with? I suppose the simple answer to this is that there might not be one characteristic Kiwi cuisine! It may not have been as distinct as we would liked it to be, but the beauty of such a cuisine, to me, means every dish is a surprise and often, such a delight. Like this butter masala chicken pie, a beautiful coming together of the different people and food, and embraced by the Kiwis all the same.

This SouperChef Special is my memory of the melting pot of cultures in New Zealand, a creamy tomato curry with warming spices, tamed with cream and butter. A non-spicy curry that can be enjoyed as a meal with masala-spiced chicken, chickpeas and sweet potatoes!

Ingredients: Chicken stock (water, chicken bones, salt), marinated chicken thigh, sweet potatoes, carrots, potatoes, chickpeas, tomatoes, cauliflower, onions, garlic, cream, butter, coriander, masala spices, ginger, salt, cornstarch

Condiments: Toasted almond slices, lime wedge and coriander leaves
