I think of tagine as a stew with attitude. It is all about the medley of spices and slow cooking, giving the wonderful flavours time to meld and develop. In Morocco, this is one of the ways the lady of the house expresses her love and affection for her family. Truly a labour of love!
This is a sublime stew we have created using the ras el hanout (Arabic for “top of the shop”, reflecting its exquisite ingredients), a beautiful blend of spices including cinnamon, turmeric, ginger, cumin, coriander and paprika, generously used with Quorn’s very tasty meat-free mince in a fragrant and fruity broth filled with prunes, chickpeas and couscous!
