Who else binge-watched Netflix’s Street Food series? Taiwan unsurprisingly was featured in the first season! To be honest, I was expecting the usual Taiwanese culinary tropes of night market street foods, not an entire episode dedicated to Chiayi’s street eats!

But I was besotted. The star had to be Smart Fish with their hearty fish head stew. The locally-sourced fish is deep-fried and the impressive broth braised for eight hours is only paralleled by the candid stories in the family business. Inspired by the featured fish head stew, our rendition stars firm, sweet barramundi in a casserole of complex flavours and textures. Warm, comforting, distinct—just like how Taiwan is to me.

Ingredients: Fish stock (water, barramundi bones, salt), Kühlbarra barramundi fish, beancurd, tofu puffs, Chinese cabbage, round cabbage, black fungus, white radish, yam, sea cucumber, onions, ginger, red chillies, king oyster mushooms, cordyeps militaris, chilli bean sauce (doubanjiang), dried beancurd sticks, leek, garlic, Thai fish sauce, vegetarian mushroom sauce, soy sauce, white pepper, corn starch, spring onions, coriander, salt, dried shrimps

Condiment: Chopped coriander
